The weekend project: After-dinner Mints

Last week's work was in the Gulag category - just keep going and hope it's over sometime. After a terrible day of work, beguile the child, briefly hang out with the man on the couch in front of the TV and then to bed. Phew. All the time I was motivated by the idea that I would do something beautiful for myself at the weekend:
MY WEEKEND.
The man is a big fan of After Eight. Here I found a wonderful-looking recipe for home-made "after-dinner mints" - that on Saturday is our cheat-day, of course fits perfectly. The word "project" may be a little over the top as the stunning, deliciously filled dark chocolate platter is easy and quick to make.

And so go t' s:

100 g dark organic chocolate (70% cocoa) melt in a water bath. To do this, heat the water in a small saucepan, place a slightly larger bowl on top of the pot and add the chocolate in small pieces. The water should not touch the bottom of the bowl or get into the chocolate - the mass will otherwise coagulate. After a few minutes and a little stirring, the chocolate has melted.

A large board or plate > strong> with a sheet parchment paper or baking paper and spread the liquid chocolate evenly on it. Stir in the fridge.

In the meantime, 200 g powdered sugar seven (which takes a few minutes, but is really important for a tender and lump-free filling). Whisk 1 egg white in a bowl and stir in half of the icing sugar.
Add 1 small teaspoon of mint oil (the edible version from the pharmacy) to the rest of the Mix icing sugar to a white, glossy cream.

Spread the cream thinly on the solidified chocolate plate and put it back in the refrigerator.
Once again 100 g dark organic chocolate ( 70%) in a water bath and pour over the chocolate-mint-plate. Make sure that the outer edges are also covered.

Leave in the fridge and keep cool until served. Enough for at least 6 people.
Together with an espresso a great alternative to traditional desserts. (In between, of course, is also.)

Everybody breaks pieces of the big whole ... that's much nicer than chocolate tablets in small little brown bags ...
